Creamy Coconut Tofu Curry

Description
This creamy coconut tofu curry is a comforting vegan dinner that’s gone viral for good reason. It’s rich, aromatic, and packed with plant-based protein — the perfect mix of flavor and nutrition. Best served with rice or quinoa for a satisfying meal.
Ingredients
250g firm tofu, cubed
1 tbsp coconut oil
1 small onion, finely chopped
3 garlic cloves, minced
1 tbsp ginger, grated
2 tbsp red curry paste
1 cup coconut milk
½ cup water or vegetable broth
1 cup mixed vegetables (bell pepper, peas, carrots)
1 tsp soy sauce
Salt to taste
Fresh cilantro for garnish
Instructions
Pat tofu dry and lightly pan-fry in coconut oil until golden on all sides. Remove and set aside.
In the same pan, sauté onion, garlic, and ginger for 2–3 minutes.
Add curry paste and cook for another minute.
Pour in coconut milk and water, stir well.
Add vegetables, tofu, and soy sauce. Simmer for 10 minutes.
Taste and adjust salt. Garnish with fresh cilantro and serve hot with rice.
