Creamy Vegan Garlic Mushroom Pasta

Description

This creamy vegan garlic mushroom pasta is one of the most popular recipes on vegan blogs right now. It’s rich, garlicky, and silky — all without dairy. Perfect for weeknight dinners when you want comfort food that still fits a plant-based lifestyle.

Ingredients

200g whole wheat or gluten-free pasta

1 tbsp olive oil

2 cups sliced mushrooms (button or cremini)

4 cloves garlic, minced

1 cup coconut milk or cashew cream

1 tbsp nutritional yeast

1 tsp soy sauce or tamari

½ tsp black pepper

½ tsp salt

Fresh parsley for garnish

Instructions

Cook the pasta according to package instructions. Drain and set aside.

Heat olive oil in a pan and sauté mushrooms for 5 minutes until golden.

Add minced garlic and cook for another minute.

Stir in coconut milk, soy sauce, and nutritional yeast. Simmer for 2–3 minutes.

Add cooked pasta and toss well to coat.

Garnish with parsley and black pepper. Serve warm.
