This recipe is trending across vegan communities for a reason: it’s quick, affordable, and you can customize it with your favorite veggies or whole grains. 

Ingredients 

  • 200g firm tofu (crumbled) 

  • 1 tbsp olive oil 

  • 1/4 tsp turmeric powder 

  • 1/4 tsp black salt (kala namak) for that “eggy” flavor 

  • 1/4 cup chopped onion 

  • 1/2 cup diced bell peppers 

  • 1/4 cup spinach 

  • Salt & pepper to taste 

  • 1 tbsp nutritional yeast (optional for cheesy flavor) 

  • 1/2 tsp garlic powder 

Optional toppings: avocado slices, cherry tomatoes, or hot sauce. 

Instructions 

  • Press the tofu using a tofu press or paper towels to remove extra water. 

  • In a pan, heat olive oil over medium flame. Add onion and bell peppers and sauté for 2-3 minutes. 

  • Add crumbled tofu, turmeric, garlic powder, black salt, and pepper. Stir well. 

  • Cook for 5-7 minutes until slightly golden. 

  • Add spinach and nutritional yeast. Stir until spinach softens. 

  • Serve warm with avocado slices and cherry tomatoes on top.
