Vegan Chipotle Chickpea Bowl

Ingredients
1 can (400g) chickpeas, drained and rinsed
1 tbsp olive oil
1 tsp chipotle chili powder
½ tsp smoked paprika
1 tsp garlic powder
½ tsp cumin
½ tsp salt
1 cup cooked quinoa or brown rice
1 avocado, sliced
½ cup corn kernels (fresh or frozen)
½ cup diced tomatoes
2 tbsp fresh cilantro
Lime wedges, for serving
Instructions
Heat olive oil in a nonstick pan over medium heat.
Add chickpeas, chipotle powder, paprika, cumin, and salt. Stir for 5–6 minutes until crispy.
In a bowl, layer quinoa, chickpeas, corn, tomatoes, and avocado.
Squeeze fresh lime juice and sprinkle cilantro on top.
Serve warm or chilled — both taste amazing!
