Introduction

Ingredients

For the Stroganoff:

  • 2 tbsp olive oil

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 2 cups mushrooms, sliced (button or cremini)

  • 1 tbsp soy sauce

  • 1 cup unsweetened almond milk

  • 1/2 cup cashews (soaked for 15 minutes)

  • 1 tbsp cornstarch (mixed in 2 tbsp water)

  • 1/2 tsp paprika

  • Salt & black pepper to taste

  • Fresh parsley for garnish

For Serving:

  • Pasta or brown rice

Instructions

  1. Blend the sauce: Add soaked cashews and almond milk to a blender. Blend until smooth and creamy.

  2. Heat olive oil in a pan. Add onion and garlic; sauté until soft.

  3. Add mushrooms and soy sauce. Cook until mushrooms release water and turn golden.

  4. Stir in paprika, salt, and pepper.

  5. Pour in cashew cream and simmer for 5 minutes.

  6. Add cornstarch slurry and stir until the sauce thickens.

  7. Garnish with parsley and serve hot over pasta or rice.
