Vegan Protein Pancakes with Banana & Oats

Description
These fluffy vegan protein pancakes are packed with oats, banana, and plant protein — the perfect way to start your morning. They’re dairy-free, egg-free, and naturally sweet, yet filling enough to keep you energized all day.
Ingredients
1 ripe banana
1 cup rolled oats
1 scoop vegan protein powder (vanilla flavor)
¾ cup plant-based milk (almond, oat, or soy)
1 tsp baking powder
1 tsp maple syrup or agave (optional)
½ tsp cinnamon
Coconut oil for cooking
Toppings:
Fresh berries
Sliced banana
Maple syrup
Peanut butter or almond butter
Instructions
Blend oats into a fine flour using a blender.
Add banana, protein powder, milk, baking powder, and cinnamon. Blend until smooth.
Heat a nonstick pan with a bit of coconut oil.
Pour small circles of batter and cook until bubbles form. Flip and cook the other side.
Serve warm with your favorite toppings.
