Vegan Thai Peanut Noodle Salad

Description
This Thai peanut noodle salad is light, colorful, and packed with flavor. It’s the perfect mix of creamy, tangy, and spicy — all made vegan. Ideal for lunch, meal prep, or a quick dinner that tastes like takeout but is 100% homemade.
Ingredients
For the salad:
200g rice noodles (or soba noodles)
1 cup shredded cabbage
1 carrot, julienned
½ red bell pepper, sliced
½ cucumber, thinly sliced
2 tbsp chopped peanuts
Fresh cilantro and lime for garnish
For the peanut dressing:
3 tbsp peanut butter
1 tbsp soy sauce or tamari
1 tbsp lime juice
1 tsp maple syrup or agave
1 tsp sesame oil
1–2 tbsp warm water (to thin)
½ tsp chili flakes (optional)
Instructions
Cook noodles according to package instructions. Rinse under cold water and set aside.
In a small bowl, whisk together all dressing ingredients until smooth.
In a large bowl, combine noodles, cabbage, carrot, bell pepper, and cucumber.
Pour the dressing over and toss well.
Top with chopped peanuts, cilantro, and a squeeze of lime. Serve chilled or at room temperature.
