Vegan Tofu Stir-Fry — Quick, High-Protein Dinner

When you need something quick, healthy, and satisfying, this tofu stir-fry is a go-to. It’s loaded with protein, fiber, and colorful veggies, making it perfect for lunch or dinner.

Ingredients

200g firm tofu (cubed)

1 tbsp olive oil or sesame oil

1 cup mixed vegetables (bell peppers, carrots, broccoli)

2 tbsp soy sauce

1 tbsp lemon juice or rice vinegar

1 tsp garlic (minced)

½ tsp black pepper

Cooked brown rice or quinoa for serving

Instructions

Heat oil in a pan and sauté garlic until golden.

Add tofu cubes and cook until lightly crispy.

Toss in vegetables and stir-fry for 4–5 minutes.

Add soy sauce, lemon juice, and pepper. Mix well.

Serve hot over brown rice or quinoa.
